After years of watching zombie movies, an idea clicked for him. The living dead in every movie will only eat free-range fresh brains and they are extremely hard to kill (clean shots only, please). The correlation seemed obvious, that if the human species is to survive the imminent Apocalypse, he would need to open a restaurant serving only organic, free-range ‘human’ friendly meats. Thus the idea of the cafe was born. It should be noted that his commitment to craft beer will not overt the end of humankind, just will make it’s passing more tolerable.
